Olsen's Lutefisk
Olsen's Lutefisk (Ludefisk or Lyefish) is made from genuine Norwegian Ling cod from along the Northern Atlantic Coast. Skinless, semi-boneless, vacuum packed and frozen in packages from approximately 1 to 3lbs. Priced $12.99 per pound.
All Lutefisk leaves Ingebretsen's frozen solid. Just put it right into the freezer if you won't be preparing it right away.
Preparations:
Old Fashioned Way - Lutefisk should be thawed and cut into serving size pieces (8-12 oz. portions). Use 3 level tablespoons of salt to each quart of water. Bring to a boil. Add serving sized pieces of fish and return to boil. Remove from heat, skim, and let steep for 5-10 minutes. (Do NOT use an aluminum kettle or pan.)
Baking in Foil - Thaw Lutefisk. When ready to cook, heat oven to 350°F to 400°F. Place fish, skin side down, in baking dish and season with salt. Lay foil on fish and bake about 20-35 minutes depending on amount of fish (check occasionally). Drain off excess water. Serve at once. HINT - for firmer fish: before cooking, soak in salted water a few hours, then soak 10 minutes in fresh cold water and rinse. Then cook.
Microwave - Thaw Lutefisk. When ready to cook, place fish on uncovered microwave dish. Put in oven on high until flaky - approximately 3-5 minutes.
When done cooking, place on warm serving dish. Salt and pepper to taste, cover with melted butter or cream sauce. Enjoy!
CAUTION: Do not overcook or fish will turn mushy.
